When originally designed and built approximately 10 years ago, a main kitchen was not included within the design of the building as a contract for meals to be provided by the main hospital catering kitchen was agreed. Supply and delivery of butcher meat to NHS Orkney for hospital meals at the Balfour Hospital. CONTRACT PERIOD The initial period of the Contract shall be from 1 November 2014 to 31 October 2017. After commencement the contract may be terminated by either party on giving eight weeks notice in writing to the other party. NHS Orkney shall have the option to extend the duration of the contract for a further period of up to one year subject to satisfactory service provision during the initial period. Your offer is to be inclusive of all carriage, packaging, insurance and other supplementary charges. DELIVERY OF MEAT PRODUCTS Delivery is required AM on a Monday / Wednesday/ Friday of each week to Balfour Hospital Kitchen area. All deliveries must be made in a secure and hygienic manner. Vehicles must be clean, free from rodent or insect infestation and residue from previous loads. Anyone delivering goods must ensure that all goods are received, checked and signed for by a member of the hospital catering staff. NHS Orkney is committed to supporting sustainable economic development within Orkney through promoting the use of traditional produce, particularly, Orkney beef and lamb. NHS Orkney reserves the right to reject meat considered of inferior quality or otherwise unsuitable and to terminate the contract in the event of unsatisfactory service. Each Delivery must be accompanied by a detailed delivery note/invoice, and an account rendered at the end of each month to: - Hotel Services Manager Balfour Hospital, Kirkwall, Orkney, KW15 1BH THE SPECIFICATION FOR THE QUALITY OF MEAT All meat supplied must meet current requirements of the Fresh Meat (Hygiene & Inspection) Regulations 1992. The Meat Products and Spreadable Fish Products (Scotland) Regulations 1984 and any other statutory legislation. All meat shall be sourced from an appropriately licensed slaughterhouse, and passed fit for human consumption. Meat shall be lean, of good colour, bright appearance and free from dark discolouration. Meat shall show no indication of an excessive storage period, thawing out and re-freezing, mishandling, cold storage burn, ice build-up on protective covering or any other deterioration. Meat shall be free of abnormal odour, or any evidence of putrefaction or mould infection. Meat should be fresh, not frozen unless by pre-arrangement. BEEF All meat described as beef must be of the same or similar quality as first quality young steer or heifer beef. It should be produced to ‘UK animal and human health standards”, as per the Specially Selected Scotch Farm Assurance Schemes or equivalent, and be accredited to EN45011 LAMB All meat described as lamb must be of the same quality as first quality British Lamb. It should be produced to ‘UK animal and human health standards”, as per the Specially Selected Scotch Farm Assurance Schemes or equivalent and accredited to EN45011 PORK All meat described as pork should be produced to ‘UK animal and human health standards” as per the Specially Selected Scotch Farm Assurance Scheme or equivalent and accredited to EN45011 BACON All bacon supplied must be produced to ‘UK animal and human health standards” as per the Specially Selected Scotch Farm Assurance Scheme or equivalent and accredited to EN45011. Bacon shall be firm in texture, free from bone taint and will possess a characteristic rich pink colour. It will be free from slime and moisture and must have no more than 1/2" of back fat. MINCED MEAT Minced meat shall have a minimum of 90% visual lean meat. MEAT BURGERS All meat burgers shall meet current regulations. Burgers described as a certain type must be made with at least 80% meat of that type. e.g. Beef burger meat content must be 80% beef and contain no offal or bone. MEAT SAUSAGE All meat sausages must conform to the appropriate regulations. Sausages described as a certain type must be made with at least 80% meat of that type.
