Ghent Guard is the food strategy of the City of Ghent. This includes five objectives to strive for a more sustainable food system. Encouraging a shorter food chain is one of the goals.
Short chain already exists but remains today still often limited to smaller initiatives aimed at the individual consumer. The scope of the city context may offer potential to give farmers and other food producers better access from the Ghent region to the market in town. In addition, we not only want to involve more producers but also better unlock new (primarily commercial) markets for these producers. In catering, retail or industrial kitchens are short chain currently prevalent, the current decline in agricultural and food products from the region is limited. The research puts the focus on this with a view to increased scale of the short chain.
Broadly, the study includes a market survey (both farmers market and the supply chain) and the elaboration of a number of possible scenarios and associated business plan.
This research should allow us to set up a pilot project in a next step, which meets the stated objective of scaling up and broadening of short chain. The testing by a concrete pilot project is beyond the scope of this assignment.
